Spring Equinox Dinner

Hosted by Stelo Arts at Camp Colton

To honor and celebrate the beginning of Spring, we’ve curated an intentional evening of delicious eats and communal connection. Join us as we reflect on what the winter months brought us, and set our visions on where the light is working its way into our lives & communities.

Expect seasonal drinks + eats, reflective conversation, nature walks, and even more heart full surprises! Please join for any or all parts of the evening. We look forward to celebrating light, growth, and renewal with you!

We’re honored to collaborate with CC’s Catering Company, a local woman-owned business led by Puerto Rican-American Chef Christina Cabrera, whose 5-course seasonal menu is rooted in family tradition and deep care. 

Tentative Schedule

3:00 PM – 4:00 PM | Arrival & Welcome on the Front Patio

4:00 PM – 4:30 PM | Guided tour through Camp

4:30 PM – 5:30 PM | Hands-on Workshop

5:30 PM – 6:15 PM | Cocktail Hour

6:15 PM – 7:30 PM | 5-Course Family-Style Dinner

7:30 PM - 8:00 PM | Dessert & Raffle Prizes

8:00 PM – 9:00 PM | Mingling & Farewell

Menu

Appetizers

Roasted Beet Bruschetta: A toasted crostini, goat cheese, peppery arugula, roasted beets, and caramelized onion with a balsamic glaze.

Smooth Carrot and Ginger Soup: With a honey-infused Greek yogurt and roasted slivered almonds.

Spring Pea Pesto Pasta Salad: sparagus, baby spinach, arugula, cherry tomatoes, mozzarella pearls, radishes, red onion, and chickpeas.

Entrée

Stuffed Chicken Breast: With rtichoke hearts, roasted red peppers, fresh spinach, creamy ricotta cheese, and mushroom gravy. Served on mashed potatos, with roasted broccolini.

Portabella Stuffed Mushroom: Quinoa, artichoke hearts, roasted red peppers, and fresh spinach, in mushroom gravy. *Vegetarian Option.

Dessert  

Strawberry & Rhubarb Trifle: Strawberry and rhubarb compote layered with pound cake with creamy topping.

Cancellation & Refund Policy

We understand that life happens and plans shift. To help us sustain our programs and prepare materials for our gatherings, our cancellation policy is as follows:

  • 4+ Weeks Prior: Cancellations made more than 4 weeks before the event date are eligible for a full refund.

  • 2–4 Weeks Prior: Cancellations made between 2 and 4 weeks before the event are eligible for a 50% refund.

  • Within 2 Weeks: Cancellations made within 2 weeks of the event date are non-refundable.

Ticket Transfers: If you are unable to attend, we warmly invite you to gift or transfer your ticket to a friend or community member. Please email tickets@steloarts.org with the new attendee’s name and contact information so we can look forward to welcoming them.
